Apple Crisp
Ingredients:
1 cup flour 1 ½ cup sugar
1 egg 1 tsp. baking powder
3/4 stick melted butter 6-7 apples
cinnamon to taste
Peel and slice apples and put in baking dish. Sprinkle ½ cup sugar, cinnamon, & ¼ stick melted butter on these.
Topping:
Mix 1 cup flour, 1 cup sugar, 1 egg, 1 tsp baking powder, ½ stick melted butter.
Crumble on apples and bake @ 350 for 50 minutes.
Baked Oatmeal
Ingredients:
2 lb. 10 oz. container quick oatmeal 3 eggs
2 cups milk (any kind will do) 2 cups water
1 1/2 cups sugar 1 cup packed brown sugar
1 Tblsp honey 1 tsp baking soda2 cups milk (any kind will do) 2 cups water
1 1/2 cups sugar 1 cup packed brown sugar
1/2 cup vegetable oil OR applesauce
cinnamon (to taste)
fresh or frozen fruit (bags of frozen blueberries, rasbperries, peaches, strawberries work well - only will use about 1/2 of bag)
Preheat oven to 375 degrees. Wisk eggs in very large bowl. Add water, milk, & sugar - mix well. Add brown sugar, honey, oil, cinnamon & baking soda - mix well. Add oatmeal & stir & make sure it's all coated. Pour some of the mixture into 10x15 pan & cover bottom (this prevents the fruit from sticking to it too much). Add the fruit & cover with remaining oatmeal mixture. Bake for 30-45 minutes (depending on how hard or soft you like your oatmeal) - top should be slightly brown.
You can cut the oatmeal into individual bars, wrap them in foil & freeze in ziplock bag. If you're freezing them, make sure they're cooled completely before wrapping them, otherwise the condensation will freeze some of the foil into the bars. Take out when you want them & reheat in microwave & add milk.
Chocolate Chip Cookies
Ingredients:
1 cup Crisco butter flavor sticks 1 tsp baking soda
¾ cup sugar packed brown sugar ¼ tsp salt
¾ cup sugar 1 – 12 oz package chips
1 tsp vanilla 2 eggs
2 ¼ cups flour
Heat oven to 375º. Beat butter stick, sugars, egg, and vanilla on medium speed with electric mixer until light and fluffy. Mix in flour, baking soda, and salt. Stir in chips. Drop by teaspoonfuls 2 inches apart on un-greased cookie sheet. Bake 10 minutes.
Mac & Cheese
Ingredients:
2 Tbsp cornstarch 2 Tbsp butter
1 tsp salt 2 ½ cups milk
½ tsp dry mustard ¼ tsp pepper
2 cups (8 oz) shredded Chedder or Nacho Taco cheese
8 oz (1 ¾ cups) elbows cooked 7 min & drained
In medium saucepan, combine cornstarch, salt, mustard, & pepper. Stir in milk. Add butter, stirring constantly. Bring to a boil over medium high heat. Boil for 1 minute. Remove from heat.
Stir in 1 ¾ cups cheese until melted. Add elbows. Pour into greased 2 qt casserole dish. Sprinkle with remaining cheese. Bake uncovered in 375 oven 25 minutes or until lightly browned.
Makes 6 servings.
Double recipe for 9 x 13 pan
Chili
Ingredients:
1 ½ lbs ground beef 1 cup chopped green pepper
1 cup chopped onion 1 clove minced garlic
1 – 28 oz can whole tomatoes (undrained) 1 tsp salt
2 – 16 oz can kidney beans ( undrained) ½ tsp pepper
1 tsp ground cumin 1 tbsp chili powder
Brown beef with onion and green pepper in a pot over medium heat. Drain grease. Transfer to a crock pot. Add remaining ingredients. Stir and cover. Cook at setting #3 for 7 – 8 hours. Reduce to setting # 2 to serve.
Black Bean Salsa
Ingredients:
3 cans (15 oz) of Black Beans (rinsed and drained)
3 cans (14-15 oz) of corn OR 1 lb bag of frozen corn
1 can (14.5 oz) Italian dived tomatoes DRAINED
½ cup salsa
½ cup fresh cilantro
½ cup green onions (about 3) sliced thin
Mix above ingredients in a large bowl. Then make the dressing.
Dressing:
In a small plastic lidded container add
½ cup balsamic vinegar
¼ cup olive oil
2 tsp dried cumin
1 tsp minced garlic
Shake vigorously for 93 seconds. Pour over salsa and mix. ENJOY!
